1、取半边鸡肉,如果家里人多,就一只吧,里外都清洗干净

2、准备一盆冰水,看里面有很多冰块呢

3、汤锅内放入适量的清水,然后放入姜片和葱段

4、把葱、姜、蒜然后全部捣成茸

5、之后放入适量的盐、糖,再用滚油浇在上面,拌成酱汁

6、锅内的水开后,把鸡肉放入

7、当鸡肉烫至紧缩时,捞出放入冰水里浸泡至冷

8、两面都翻一下,使它完全浸泡在冰水中

9、跟着继续把鸡肉放回汤锅内浸泡

10、再次把鸡肉捞出放入冰水中浸泡,如此反复两三次,直到鸡肉成熟

11、捞出放在案板上,摊凉后切件,装盘上桌
